Walt Disney World is probably the *most* accommodating when it comes to rides with no height requirements; however, there are some attractions with a minimum height requirement. Knowing the height requirements prior to your next trip to Walt Disney World may mitigate some tantrums while in the parks.
While it may be a disappointment for the shorter kiddos, height requirements are meant to keep kids safe. One of the things my kids love to do during their yearly wellness check-ups is to see if they are tall enough for Space Mountain or Flight of Passage.
Check out the height requirements for each of Walt Disney World’s theme parks:

What do you do if your child isn’t tall enough to ride? Do you have to miss out?
No! If someone in your group does not meet the minimum height requirements, you can still enjoy the attraction using Rider Switch.
Rider switch is a special pass that allows your group to easily split, where the first part of the group rides (while at least one adult waits with the child not riding) before switching to allow the second group to ride via the Lightning Lane.
At attractions offering Rider Switch, locate a cast member at the ride entrance. You will want to decide how you will be dividing your group. The first group will ride while the second group waits with the child not riding. Both groups will need to approach the cast member at the attraction’s entrance, and the second group will be issued a Rider Switch entitlement in their My Disney Experience account. Then the first group will ride while the second group waits with the child who is not riding. *PRO TIP* Instead of just waiting, find something fun nearby to pass the time. After the first group exits the ride, they take over supervision of the non-riding child and the second group enters the attraction via the Lightning Lane queue. Make sure to have your Rider Switch validated by scanning your MagicBand/Key to the World Card/MagicMobile.
My older son LOVES Rider Switch. Disney allows one person from the first group to accompany the person waiting in the second group. So while I am waiting with my toddler, my older son is living his best life on the attraction. Then he gets to immediately re-ride the attraction again with me via the Lightning Lane queue.
So while having height requirements can sometimes be a bummer for the younger (shorter) crowd, Walt Disney World is AMAZING in that they have so many attractions with absolutely no height requirements — this ensures that everyone in your family have a *magical* time.
